Primary fermentation started
Starting! First time brewing
Combining all ingredients minus honey and cinnamon stick. Make sure to agitate the juice before adding yeast and nutrient.

Starting to clear up, lees is settling at the bottom.

Racking day! nice and clear Cider! Strong crisp apple smell
Let it breathe a little and used a paddle help get any remaining fermentation smell out
Backsweetened with 8 ounces of honey and then added cinnamon stick that will be removed in 3-4 days
Backsweetened with 8oz of Golden Blossom Premium U.S. Honey. Then added a McCormick Cinnamon Stick that will sit hwre for 3 days before I remove it from the cider
Added my sanitized keg and my honey apple cinnamon cider into the fridge at around 36-38 F to prep for kegging on the next day
Sanitized mini keg, added both Cider and the keg into the fridge to get colder in prep for kegging and carbonating tomorrow
About 3 hours later, I had to open up the co2 valve again to allow the psi to creature to 15. Seems like the Cider is absorbing it nicely.
Racked into a 1 Gallon keg, cinnamon stick removed. set psi to 15, letting it absorb the co2 for the next couple of days. After I set to 15 psi I released the pressure valve a few times to allow for the co2 to push the oxygen out of the keg. Monitoring pressure changes and ensuring it stays at 15psi for a week.
Bottling & resting started
Final rack, Kegged, and starting to force carbonate at 15psi.
